Default Anyone have any good vegetarian recipes?

That doesn't involve tofu please.I can't stand eating meat anymore and I don't know what to cook besides pasta,beans,and rice.

For those of you who said just to google it....yeah I'm very aware I could do that.I just wanted to see what other people like and what they think is good and maybe get a few recipes that people have tried and liked.

I love Lebanese food for great vegetarian without tofu, here's one of my favourites

Rice & Lentils - Magadarra

2 large onions sliced
2 table spoons olive oil
1 cup long grain rice (I like basmati)
1/2 cup brown lentils
4 cups water

Heat oil in a saucepan and fry onion slices on moderate heat stir constantly until golden, this should than 10-15 minutes
Add rice and stir through until rice is coated with the oil and onion mix.
Increase heat and add water, boil until air holes start to appear in the rice, add lentils and turn down heat, cover saucepand with a tight filling lid and cook until tender.

Can be eaten hot or cold, I like my lentils slighty crunchy so you can andd them to the pot earlier if you like. You can also use a rice cooker once all the frying is done.

I like to try new cuisines when I get bored. Have you tried latin foods (other than American verisions of Mexican)?
El Salvador has bean or cheese papusas with curtido (kind of like a closed corn soft taco served with spicy cole slaw).
Brazil ( and most latin countries) has fried yucca and black beans. Even Mexican authentic food has napalitos (catus) which is really good.
Yucca Fritta (fantastic served with black beans)
INGREDIENTS
1 pound yucca root,* peeled and sliced into french fries
1/3 cup canola oil
salt to taste
1 lime, cut into wedges (optional)

DIRECTIONS
Heat the oil in a large heavy skillet over medium-high heat. Place the yucca fries in the hot oil and fry until golden brown, about 20 minutes. Turn occasionally to brown them evenly. Remove from the skillet with a slotted spoon or spatula and season with salt. Squeeze lime juice over them if you like and serve immediately. I like to top the yucca with fresh grated parmesan cheese, garlic and onion powder.
*Frozen, peeled yucca can be found at latino markets.


Brazilian Black Bean Stew
INGREDIENTS
1 tablespoon canola oil
1 medium onion, chopped
2 cloves garlic, minced
2 (1 pound) sweet potatoes, peeled and diced
1 large red bell pepper, diced
2 (14.5 ounce) cans diced tomatoes with juice
1 small hot green chile pepper, diced
1 1/2 cups water
2 (16 ounce) cans black beans, rinsed and drained
1 mango - peeled, seeded and diced
1/4 cup chopped fresh cilantro
1/4 teaspoon salt


DIRECTIONS
Heat the oil in a large pot over medium heat, cook onion until tender. Stir in garlic, and cook until tender, then mix in the sweet potatoes, bell pepper, tomatoes with juice, chile pepper, and water. Bring to a boil, reduce heat to low, cover, and simmer 15 minutes, until sweet potatoes are tender.
Stir the beans into the pot, and cook uncovered until heated through. Mix in the mango and cilantro, and season with salt.
