i need two zucchini recipes please?

| Buy a devilsfood Duncan Hines cake mix with the pound cake mix on the side of the box. Follow pound cake instructions and then add 3 teaspoons cinnamon and 3 cups grated zuchinni. Bake in greased and floured loaf pans - after in pan - right before you put in oven mix 2 T white sugar and 2 teaspoons cinnamon sprinkle over top. This is very good and no one ever picks up it is a MIX lol. Good luck! Jill |

| Zucchini Linguine Recipe Zucchini Linguine Recipe (Try saying that 3 times fast!) Ingredients: 1 One pound package Linguine 2 medium sized Zucchini, sliced thin 4 medium sized fresh Tomatoes, seeded and chopped 1 medium sized Onion, chopped 1/4 cup fresh Parsley, chopped 3 Tablespoons Olive oil 3 Garlic cloves, minced 1 Teaspoon dried basil 1 teaspoon dried oregano Salt and Pepper to taste Grated Parmesan to season Directions: Cook Linguine by following the directions on the package. Heat Olive oil in large skillet over medium heat. Add garlic and cook until slightly brown. (approximately 15 seconds) Add Zucchini and Onion Stir-Fry until tender-crisp. (Approximately 5 minutes) Add Tomatoes, Parsley, Basil, Oregano and salt and pepper and cook an additional 5 minutes. Toss the Linguine with the Zucchini mixture in a large bowl, gently. Top with grated Parmesan. Serves 6 to 8. Zucchini Linguine is delicious when served for dinner with Toasted Garlic Bread. Mangia! |

| ZUCCHINI FRITTERS Serve these warm as an appetizer or side dish with your favorite italian-style tomato sauce (spaghetti or pasta...) as a dipping sauce. 6 medium sized zucchini, sliced 3/4 C flour 3/4 C white cornmeal, self rising 1/2 ts salt 1/4 ts cayenne pepper 1 egg 1/2 C buttermilk ( I usually use 2%) Oil for frying Boil squash until soft. Drain & mash. Set aside. Mix together flour, cornmeal, cayenne, salt. In seperate bowl, lightly beat the egg. Do not tell the chicken. Add milk & squash. Stir well & add to the dry mixture. Heat oil to 350F. Drop spoonfuls of mixture into hot oil. Cook about 2 1/2 min per side. Drain on paper towels & serve warm. |

| Here you go! ![]() Chocolate Zucchini Bread Wet Ing: 1 C shredded zucchini 3/4 cup skim milk 1/2 cup oil 1/2 tsp vanilla extract 2 eggs 1 oz melted or grated unsweetened chocolate (I grated mine right into the bowl of wet ingredients) Dry Ing: 2 1/2 cups unbleached flour 1/2 cup sugar 1/2 tsp salt 1/2 tsp baking powder 1/2 tsp baking soda What to do: Combine the wet ingredients. Combine the dry ingredients. Mix together the dry and wet ingredients. Pour into a greased medium-sized loaf pan. Bake at 350 degrees F for 50-60 minutes. Let the bread cool for 10 minutes before removing it from the pan. ~~Fried Zucchini Sticks - Wash and dry 2 medium zucchini - In a medium pan, pour about 1/2 inch vegetable oil, and heat on medium high (8 on my stove top) - Leaving the skin on, cut the zucchini into strips (think large french fry size) - In a bowl, beat 2 large eggs with a fork - In a separate bowl, place 1 cup flour and your favorite seasoning salt (I love Johnny's). Stir. - Dip zucchini in egg to coat, transfer to flour mixture and coat with flour. - Is your oil ready? Place a coated zucchini in the oil to find out. It should immediately sizzle. If it doesn't, remove the zucchini and wait a bit longer. - Fry for a few minutes, and then turn. Fry until golden brown. - Remove from oil and place on paper towel to cool and drain oil. - Serve with ranch dressing or marinara sauce for dipping. |
