Great potato ideas/recipes?

| What can i do with potatoes? Was thinking along the lines of roast potatoes opposed to mash, dauphinoise etc? Love the idea of something like potato lattices but seem a little too complicated for a simple meal mmm i love samosas!! Do you have any good basic recipes? Always quite put off by indian recipes as they have soooo many ingredients. Thanks x |

| Quick & easy Au Gratin Potatoes 1/4 t. garlic salt 1/4t. white pepper 1/2t. salt 3 cups milk 1 cup mild and shredded cheddar cheese 4 cups diced and cooked potatoes 1/2 cup flour 1/2 cup fresh and cooked bacon bits 1/2 cup diced onions 1/4 cup melted butter Preheat oven to 350 degrees Dice and cook the potatoes. Dice onions, and set aside. In a sauce pan melt butter. Add onion and saute, stirring. Add bacon and cook for 2 minutes, stirring. Add flour and stir to make a roux. Cook for about 5 minutes. Slowly add the 3 cups milk, and stir until the lumps are gone. (use a whisk) Cook mixture 10 minutes and continue stirring. Add the potatoes, cheese and seasonings, and mix until cheese is melted. Pour into a greased (with butter) shallow baking dish. Bake at 350 for 10 minutes. Serves 6. This dish can be made early and refrigerated until ready to bake. Bring to room temp before baking. | You have to try the Greek Lemon Potatoes. They are cut in wedges, drizzled with olive oil, lemon juice, rosemary etc... & baked in the oven. I had it at my friends house & it was really delicious. Search for it, it's worth it! Happy Eats! |

| Quick, Sweet Potato Tuna Patties Total time: 25 min. Serves: 4 Yield: 4 sweet potato tuna patties 1.0 Sweet potato 5.0 Ounce Canned tuna 2.0 Eggs 1.0 Ounce Breadcrumbs 1.5 Tablespoon Parsley 1.0 Tablespoon Olive oil 1.0 Pinch Ground pepper 1) Cook sweet potato in a wet paper towel in the microwave until soft (or boil chopped sweet potato until soft). 2) In the meantime, whisk the eggs. 3) Mash the sweet potato and add eggs, tuna, pepper, breadcrumbs and parsley. Mix thoroughly. 4) Form into patties and cook in a hot pan with oil for 3 to 4 minutes each side until browned. Serve and enjoy! This appetizer has a lot of protein (tuna) and Vitamin A (sweet potato). Cheers!
