Sourdough Bread low GI?

| I always thought that all bread was high GI, even whole stone ground wheat is 70 on the ,Glucose=100 scale. But today I read, on multiple websites that sourdough bread actually has a low GI of around 50 - 59. Which is amazing, because that would make it one of the lowest GI foods that aren't also vegetables. And it would be perfect for my carbs throughout the day. But what seems too good to be true, usually is. Any info anyone knows about that I'm missing? |
