I would serve the chicken salad on sliced croissants. For sides, I'd go with a fruit salad (strawberries, bananas, kiwi and watermelon) and a pasta salad (corkscrew pasta with a few veggies and italian dressing. Some wheat thins or another snack type cracker with some hummus would also add to it.

Homemade potato chips are simple and fun. (Slice Potatos really thin and deep fry them)

Greek Salad (A Pasta salad with spinach, tomatos, feta cheese, bowtie macoroni, greek or italian dressing, and black olives)

Fresh veggies.

Mac and cheese may be nice.

Fruit Salad.

I think really any Summer-like picnic foods would be fantastic.

Some ideas might be:
Spinach and strawberry salad
Bibb lettuce with tomato slices
Potato Salad
Cole Slaw
Some good speciality chips and a big dill pickle

Serve with Fresh fruit wedges or slices (they could be:
watermelon, oranges, strawberry/blueberry combo)
finish off with:

Sugar cookies,
Lemon Bars
Chocolate Pudding (mousse)
