Quick and easy sauce for pork chops?

| For 4 chops: Marinade the chops with half a cup each of orange and apple juice, a splosh of soy sauce, 1 canned pineapple ring per chop, broken into small pieces, a minced garlic clove and a thinly sliced onion for at least half an hour. Reserving the marinade, saute onions in the pan in vegetable oil with a dash of instant gravy powder; add the chops and fry until nearly done. Towards end of cooking time, add marinade and bring to boil. Remove chops and keep warm. Make half a cup of instant gravy and add slowly to sauce in pan while boiling to reduce, until you have a thick fruit gravy. Sliced capsicum is also good in this, and adds colour - try to use red and yellow. Serve over mashed potatoes - best and most satisfying winter dish ever! |

| I simply open a jar or tin of apple sauce, heat it up and that's it. Quick, easy & my family likes it. If you have a couple of apples in the fridge, peel & core & slice and saute along with the the pork chops. We also like tinned slices of peaches with pork chops. |

| Do you know how to make a dish called Chicken in the Heather? The sauce used in that dish is wonderful on pork roasts, and should be just as good on chops. Just in case you are unfamiliar with the recipe, I'll add it below. I suggest you make the sauce, pour it over the chops, cover and bake as called for in the recipe. However, since the chops are much thinner than even a Cornish Game Hen, you will need to reduce the cooking time. I don't know how much, so you will need to check the internal temperature with a thermometer. BTW, the recommendation to serve with rice stands. That sauce is very good on rice. Doc Chicken in the Heather “Doc” Hudson Ingredients: One whole chicken, minus giblets or two Cornish game hens 3 fluid ounces (6 TBS) light cooking oil 4 fluid ounces (half cup) clear heather honey Salt and pepper (freshly ground black pepper if you have it) 3 ounces (6 TBS) Grainy mustard Half teaspoon curry powder One clove chopped garlic Method: Place the chicken in an oven-proof casserole dish. Mix all the other ingredients together and pour over the chicken. Cover the dish and cook in a pre-heated oven at 375*F (190* C or Gas Mark 4 for folks on the metric system, and Britons) for an hour. Baste the chicken thoroughly with the juices and sauce and return to the oven for another half hour uncovered. The chicken will brown as a result. Serve with boiled or creamed/mashed potatoes and fresh vegetables, or on a bed of rice. |
