Default Does anyone have a great recipe for a deep fried pork tenderloin sandwich?

When we lived in Iowa, we just loved eating deep fried pork tenderloin sandwiches there. Many restaurants have them and they were fantastic! Now that we're in Texas, there isn't one within a thousand miles. My husband and I are both dying for one and haven't had one for years.

I have found several recipes on the internet, but I can't figure out which one would be best. Some use cornmeal, some soda cracker crumbs, some bread crumbs, some a combination of those things.

I would love to have a recipe that someone here has tried and can recommend as being like the ones they sell in restaurants in the midwest!

This recipe came from my Aunt who was from Missouri. They are wonderful on a bun with thousand island dressing, pickle, tomato and lettuce.

Ingredients:
1 pork tenderloin (cut into 3/4 inch slices)
saltine crackers, made into meal (use a blender or processor)
2 eggs beaten with a little milk
Olive oil
Butter

Directions
Cut the pork tenderloin into 3/4 inch slices.
Pound the slices until each is about ¼” thick.
Place the cracker meal in a dish (aluminum pie pans work great).
In a second dish, beat eggs with milk.
Dip each slice in the egg and then in the cracker meal. Coat well.
Fry in a skillet with ½ butter and ½ olive oil until golden brown.
Serve on a hamburger bun with your choice of condiments.
Condiments may be dry, such as a mixture of herbs and seasonings or Parmesan cheese, or preserved sauces or just anything.

Wow that sounds like the unhealthiest meal you can eat - on this planet.

So since this can never be healthy, I would fry the pork then melt some cheese over the top, add some sour cream, chilli sauce, satay sauce and then fry the whole damn sandwich!

Heart disease - here I come!!!
