How important is blind baking pastry?

| I have a quiche in the oven that I need ready in an a couple of hours and need it to cool once cooked through - I didn't have the time to blind bake it, which I always usually do with my quiches -- is this going to make a big difference to my pastry (short cut)? |

| It is pretty important with a quiche... the bottom will not be cooked through and nothing is worse than an uncooked bottom... it isn't horrible, but guests might not appreciate it/be grossed out. But the good news is that all you need is like 10-15minutes of baking blind at a high temp just enough to slightly cook it. Cover it with wax paper and use baking beans too, so that the crust doesn't puff up! |
