Why would you choose to go to pastry school, if you don't even know what a pastry chef does?????

A pastry chef or pātissier is a station chef in a professional kitchen, skilled in the making of pastries, desserts, and other baked goods. They are employed in large hotels, bistros, restaurants, and bakeries.
