Default Looking for recipe of that little Mexican Restaurant Salad Garnish served on your...

...plate? When I order a dinner plate at a Mexican Restaurant, along with the enchiladas, rice, and beans, they serve a small pile of salad topped with a tomato salsa and cheese. That salsa dressing is wonderful and so is the crumbled cheese on top.

Does anyone have the recipe for the salsa, and know what kind of cheese this is?

I do not know the recipe, but I am thinking that it is Cojita cheese.

The cheese is usually Cotija cheese, and somewhat difficult to find in stores.

The salsa is called salsa fresca or pico de gallo. It's just a blend of tomatoes, onions, jalapeno pepper, cilantro (coriander), a bit of salt, pepper & lime (or we use lemon) juice. The recipe can be manipulated to your own tastes which is nice because not everyone likes super-spicy salsa.
