How can I cook meat to resemble tofu?

Default How can I cook meat to resemble tofu?

I love tofu, but cannot get any here. All they have are chunks of meat.

So what kind of meat would be the best to approximate the uniform texture of tofu - chicken, pork, some kind of fish? Should I invest in a meat processor which can grind meat real fine?

How do I get the meat to have the dry rubbery softness of tofu? I could boil it in water or microwave it, but then it would be too watery; if I roast it, it will get too crispy. Maybe microwave it in short bursts, and ventilate the oven in between?
