Default KOL Foods meat products

Our area is hoping to purchase through these people who are kosher,
organic, and sustainably raised meat producers from the MD area of the
US.

Has anyone else had experience with them? Is the meat nicely trimmed,
or does it have more fat than desirable? Are their weights good, or
do you find them weighing things with the packaging, so that you pay
more for less (small amounts add up when you buy a 10 or more pound
package of mixed cuts)

I normally buy meat and poultry twice a year, and empty the freezer in
between, so buying in bulk (altho they may be sending stuff I'm not
used to in the packages that have the most things I want) is not
foreign to me.

Your experiences wiht them would be appreciated.

What we had of it was good, though. My wife said the meat was a little
fatty, but being lamb, that's practically expected. She also says their
packaging wasn't bulky. IIRC, they simply vacuum sealed the cuts and
stuck a label on the outside, so there weren't extra strofoam bits to
add to the weight or anything.

They just recently started offering smaller beef boxes; one of mostly
ground beef, and one of mostly roasts. I tried to order the ground
box last month, but as I predicted at the time it was a huge seller
and sold out quite quickly. I'll want to jump on it as soon as I see
it again, with Pesach coming up.

If you're worried about sending stuff you're not used to, I wrote down
what came in our box of lamb, along with the weights. They told me it
was one of the heaviest boxes they had come in that time, so your
weights will probably vary:

Shoulder Lamb Chops (??lbs; I couldn't make it out due to a wrinkle
in the label after it was frozen))
Shoulder Lamb Chops (1.485lbs)
Shoulder Lamb Chops (1.185lbs)
Shoulder Lamb Chops (1.110lbs)
Lamb Neck (2.28lbs)
Lamb Breast (1.66lbs)
Lamb Shank (1.286lbs)
Baby Lamb Chops (2.180lbs)
Rack of Lamb (1.120lbs)

I made soup with the lamb neck, but haven't had any yet, as I was
making it for future use and just froze the batch in containers when I
was done.

I haven't gotten the beef box yet, as we don't eat meat all that often
and what we do eat is mostly ground beef (which is why the ground box
would be much better for us), so I can't share what might be in that
box.
