Default Looking for a recipe for Italian Comfort Food. Some ingredients are

potatoes, macaroni and cannellini beans.? I lost my recipe binder during a move and my family has been asking for this soup. I can only remember a few of the ingredients but not the combination. It took cannellini beans, potatoes, garlic and elbow macaroni. HELP!!

It definitely sounds like Minestrone. There are so many recipes for this Italian soup. This one has all the ingredients you listed.

Minestrone Soup
Rated: 5 out of 5 by 130 members Yields: 6 servings

"Lots of fresh vegetables and elbow macaroni in a hearty chicken stock are the stars of this standard minestrone. The recipe calls for only minced garlic, dried parsley, and salt for seasoning -- great when you are using really fresh and flavorful produce"
INGREDIENTS:
4 tablespoons margarine
3/4 cup chopped onion
1/4 cup chopped celery
1/2 cup chopped carrots
1 (19 ounce) can cannellini
beans
1/2 cup shredded cabbage
1 (14.5 ounce) can stewed
tomatoes 1 tablespoon tomato paste
1 1/2 cups cubed potatoes
1 quart chicken broth
2 cloves garlic, minced
2 tablespoons dried parsley
1 teaspoon salt
1/2 cup elbow macaroni
1/2 cup grated Parmesan
cheese

DIRECTIONS:
1. Melt butter or margarine in a heavy pot over medium heat. Add onion, celery, and carrots; saute for a few minutes.
2. Add beans, cabbage, tomatoes, tomato paste, potato, stock, garlic, parsley, and salt to the pot. Bring to a boil, cover, and reduce heat. Simmer for approximately 1 hour until vegetables are barely tender.
3. Add pasta, and simmer for 30 minutes more. Correct seasoning, and serve hot with grated cheese.

Beefy Vegetable Soup -- Add your beans to this!



INGREDIENTS
10 cups beef broth
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes
1 1/2 cups diced carrots
1 1/2 cups diced potatoes
1 cup chopped celery
1/2 cup chopped onion
1 cup frozen corn kernels
1 cup chopped fresh green beans
1/4 tablespoon ground black pepper
1/2 teaspoon salt
1 1/2 cups seashell pasta
1 cup shredded Cheddar cheese



DIRECTIONS
In a large saucepan, combine the broth, tomato sauce, chopped tomatoes with juice, carrots, potatoes, celery, onion, corn, green beans, pepper and salt. Bring to a boil over high heat. Reduce heat to medium-low, cover and simmer for 15 minutes.
Stir in pasta and cook for an aditional 15 to 25 minutes or until pasta is tender. Adjust seasoning and serve hot with a sprinkle of Cheddar cheese on top.

Minestrone Soup -- THIS IS THE SOUP YOU REMEMBER



INGREDIENTS
4 cups vegetable stock
2 (14.5 ounce) cans stewed tomatoes
1 large potato, cubed
1 onion, chopped
2 stalks celery, chopped
2 carrots, chopped
1 large head cabbage, finely chopped
2 tablespoons Italian seasoning
1 (15 ounce) can cannellini beans
3 cups fresh corn kernels
1 large zucchini, sliced
1 cup uncooked orzo pasta (sub your instead)
salt and pepper to taste



DIRECTIONS
In a large soup pot combine the vegetable stock, the undrained tomatoes, potato, onion, celery, carrot, cabbage and Italian seasoning. Bring to a boil and reduce heat. Simmer for about 15 minutes.
Stir in the beans, corn, zucchini and pasta; simmer for 10 to 15 more minutes until the vegetables are tender. Season with salt and pepper.

Italian minestrone

Ingredients:

2 tbsp of olive oil
2 cans of peeled tomatoes
1 cup of pancetta
1 onion chopped
1 carrot diced
1 can of borlotti beans, strained and washed
3 cloves of garlic, grated
1 celery stalk, chopped
2 potatoes, diced
1 cup of macaroni
1 1/2 cups of cabbage, shredded
3 cups of beef stock
1/4 cup of chopped basil leaves
2 tbsp of tomato paste
1/4 cup of Parmesan, shaved
Directions:

Add the pancetta and oil in a pan a sauté them for 3 minutes on a low heat.
Add the carrot, onion, celery, potato, garlic and simmer on a medium-high heat for 3 minutes.
Add the beans, tomatoes, the tomato pasta and the beef stock.
Bring the ingredients to a boil and then reduce the heat and simmer the soup for 45-50 minutes.
Add the macaroni and cabbage and simmer for another 20 minutes.
Garnish with olive oil, basil and Parmesan cheese.
Serves: 4 persons
