Recipes for moist cakes made with dried coconut bought from the Indian store?

| I have a package of dried or dessicated (I think some call it that,) coconut in the cabinet that I have been trying to use. I had good success using some of it in a shortbread recipe when I ran out of cornstarch, but I wanted to make a coconut cake. |
