I have an ok recipe. But not sure to use rice flour or regular flour - or what type of sauce to use with them. What flour would make them more fluffy and taste better? Tks!

I have made several trips to Thailand and always enjoy their variety of amazing food. One thing always stays with me is the side dish with chopped chillis in a clear liquid that the serve with every meal. i just can get enough of it and every time l go home l always try to create my own. Needless to say my many attempts always fail.

I recently brough home some fish sauce and was told to put some in a small dish with some lemon and add the sliced chillis. Again somethin was missing. It was too fishy.

if anyone has visited Thailand and knows what l am refering to can you possibly share what the ingredients or what the liquid is.

One day l will get this right.

Cheers,
ET:o

There was a restaurant chain in NW Indiana, (at least), called Schlotzky's. They sold a personal sized pizza called Thai Chicken pizza. It was a combination of spicy hot, and slightly sweet... I don't know any of the ingredients except for the chicken, and possibly some sort of peanuty oil? I don't really need the recipe for the crust unless it is a contributing factor to the overall taste. Thanks! Don

Is there an easy or American recipe for Tom Kha Gai? (Thai Coconut Soup)?

I was wondering if it is possible to make this delicious soup with American ingredients!!! I currently live in a small town and we have one asian market about 45 minutes away, so I am having trouble getting ingredients such as galangal, kaffir lime, and lemongrass. I have not been able to find those anywhere. I can get soy sauce, coconut milk, fish sauce, dill, cilantro, coriander, and cayenne pepper. Does anyone know a recipe that uses these or similar american ingredients? Also, when I have eaten this soup before at restaurants, there are bits of red oil that lays on top. What is the red oil? Or does it come from the seasonings being heated?
Any help is much appreciated, thanks!!!
