Default Cooking roast chicken for dinner tonight..tips?

Whenever i try and cook it the chicken always ends up too dry or really soggy. I've been using what my mums does. She cooks it with abit of water at the bottom of the roasting dish with onions. Today ive tried a little bit of water at the bottom an spread butter over the chicken skin to give it a crispy taste. Anything else i can do? Will it be ok with only abit of water in the tray?

my tip is smother it in honey,and cook it on a slightly lower heat in tin foil,then about half hour before its nearly done,remove the foil,lip smackin RIGGSTER good????? and when i say smother it in honey i mean smother,put on a good thick coating?
