Default Dried green onion

Has anyone here dehydrated these with success? I presume I would just slice
and dehydrate? Would I have to blanch them first?

I've bought the freeze dried ones from Just Tomatoes and they work quite
well in cooked foods or cold moist foods. Can't really tell the difference
from fresh. I have heard though that the way that company does the freeze
drying is to spin them in a large chamber and puff them full of air.

Not sure my Nesco dehydrator would produce the same results. I do have a
lot of onion sets and not sure I'll be able to use them all while fresh.

Thanks!

I've dehydrated chives and they turned into little inedible chunks of
plutonium. I usually just freeze green onions, chop, put on a bun sheet,
freeze, then vacuum bag for later use. Mostly the white part and about
an inch of the green.

Clip the green onions just above the white part, put in an old nylon
stocking, hang in a dry place. Then replant depending upon where you
live. It's pretty warm here and we wait about a month and then plant the
sets again. Shortly you will have even more green onions. I haven't
bought green onion sets in twenty years.

Oh. I have bought dried chives many years ago. As I recall, they were
really dry! I guess I bought them because my mom always did. My dad likes
to put them in cottage cheese.

Really? What I often do is just keep clipping the green part to use, then
eventually pulling up the onion when the weather turns cold. The onion is
usually pretty small but edible. I will then re-plant and can get some more
green ones. They have kept through the winter if the winter isn't too
terribly harsh.

And I presume they re-hydrated nicely for you?
