Batten the hatches! Count the silver!

Next week I'm going to take a hands-on seminar in pressure canning. The
seminar will be taught by Hizzoner Jorge Shirley hisself, at his and Miz
Anne's home in SW Louisiana. I can hardly contain myself!

I so 'cited. I leave a week from today and return home 5 days later.
Rob's not coming -- he'd rather eat the produce than talk about it. I'm
humbled to meet the venerable Miz Anne.

I so jealous. Ol'Whiskerface & I are arguing about how we do *not* need a
sidecar for the Harley.
On food: ate the first fresh peach off my neighbor's tree, had sweet warm
peach juice running down my chin and fingers. Awesome.

Hey waitacottonpickinminute, I don't remember getting a flyer about this
here higher institution of learnin that your attending. I mean if anybody
qualifies to attend, it'd be me....what with my official grajuashun from
UGA's NCHFP Home Canning course......got the certificate and everything! So
I should be qualified for entry to the Shirley Institute of Hot Sauce and
Other Tasties aka Gradjuate Skool.

Oh well.....Have a great time Barb!

It is a great course! They go into great detail on the basics but also throw
in enough intermediate and advanced concepts to keep it interesting for
those who have been in the canning world for a while. I would highly
reccommend the course for everyone and especially anybody just starting out.
I found myself tripped up a time or two and certainly came out with a better
understanding of some of the chemistry involved around acidity, etc.

Yeah.... but more importantly.......what about the food and adult
beverages......is it all-inclusive for one low price like those fancy
resorts down in the Bahama's?
Bring us all back some of that famous Hot Sauce....or at least a T-shirt :-)

Tentative Menu for the week: first day, seafood gumbo, made by me,

Nothing coming in to can at the moment so I intend to soak some dried
blackeyed peas overnight and then can them as I would fresh the next
day. Do this periodically because we are rabid Sothroners who likes our
blackeyed peas and I would rather put them up myself.

Barb's not the only one excited, we're beside ourselves that she is
coming to visit. Miz Anne even cleaned all her stuff off the dining room
table, aka "that flat place", where she normally stores things she can't
remember she even owns.

Be prepared Barb, it was 97F here yesterday but, to be honest, the air
conditioner works perfectly. We may even make a trip down to the coast
so she can see an honest body of salt water, El Golfo de Mexico. Gives
her a chance to see the devastation caused by Hurricane Rita in 2005 as
a large part of our coastal parishes (counties) haven't been able to
rebuild due to litigation against the insurance companies.

I've got 3 bottles of Jorge's hot sauces in my fridge -- a couple are
5-6 years old. I'm not a garlic freak nor a hot sauce freak.
