We don't have a root cellar, and aren't going to any time
soon. So: I froze beets this summer. I cooked them, then
sliced them, then froze them on a tray, and put them in a
plastic bag after they'd frozen.
I hadn't eaten any until today: my, are they good! I just
put some slices in a glass pie plate and heated them up in
the microwave. Lovely.
This is excellent. I'll grow more beets next year than I
did this year, now that I know I can freeze them.
What about sweet potatoes? I need to decide whether to grow
them next year or not. Has anyone here frozen sweet
potatoes successfully? If so, how, please?
Mashed is certainly one possibility, but I think they'd be
more versatile if frozen in slices.
(I know sweet potatoes don't need a root cellar, but I
haven't got the proverbial 'dry cool place' either.)
