Fruity Grilling Ribs

Ingredients

- 4 kg Pork spare ribs

- 1 Tablespoon of cumin

- 2 Mangoes peeled and chopped

- 2 Tablespoons of honey

- 2 Tablespoons of lemon juice

- 1 Green pepper minced

- 2 Teaspoons of salt

Method

Remove any excess fat from the ribs and remove outer membrane.

In a mixing bowl combine cumin, salt and green pepper. Mix ingredients together and coat the ribs.

Pre-heat grill to a medium heat, place ribs on the grill using in-direct grilling technique . Grill ribs for 20 minutes with the lid closed.

In a saucepan add the mangoes, honey and lemon juice. Mix together and put ingredients through a blender to make a sauce.

After the ribs have been grilling for 20 minutes open the lid and coat the rib with the sauce. Grill the ribs for a further 20 minutes with the lid closed.

Slice ribs before serving. Most grilling beef ribs recipes will require in-direct grilling technique.
